Super simple Instant Pot beef alla vodka sauce

So easy yet soooo sophisticated. I love a vodka sauce and I wanted to make a beefy version for the cold winters. This recipe requires NO CHOPPING and if you don’t have an instant pot you can totally use ground beef and cook everything on the stove top.

Serve 4, prep 5 mins, cook 35 mins

Ingredients

1 Tbsp oil

1 lb stewing beef

1 tsp dried Italian herbs

1 large jar marinara (I used Costco’s 907g size)

2/3 c.(150ml) heavy cream

1/4 c.(60ml) vodka *optional

4 servings cooked penne pasta

parmesan and fresh Basil to garnish

1/ Set instant pot to sauté and add oil. Once hot add the beef, season with salt and pepper and Italian herbs. Brown beef on all side then turn off sauté. Drain any excess grease.

2/ Pour in sauce and scrape up the brown bits from the bottom of the pot. Lock the lid on with vent closed and pressure cook high for 25 minutes. Slow release for 10 minutes then manually release to open. (If using ground beef on stovetop, simmer on low for 20 minutes then turn of heat.) This is a good time to cook your pasta.

3/ Stir in the cream till well mixed then stir in the vodka. Season to taste then cover while you plate the pasta. Stir sauce and ladle onto pasta. Serve with Parmesan and a few basil leaves. Bravo!
