Copycat Taco Bell Mexican Pizza

If you’re like me, you were devastated by the news that Taco Bell was retiring their delicious Mexican Pizza this fall. I’ve been eating these things since I was a child and since I can’t get them here in the UK, I always make it a point to get one when visiting the States. I know, Taco Bell isn’t the healthiest by far but it’s always been an occasional treat, even when I lived walking distance to one a few years back!

The good thing about this recipe is the product quality will definitely be a bit nicer than Taco Bell but that nostalgic flavor is all there. Hope you enjoy with family and friends!

Copycat Taco Bell Mexican Pizza

It may have made it's heartbreaking exit from the Taco Bell menu this year but don't fret, you can make your own!

Ingredients

  • 1 tsp oil
  • 1 jalapeño, seeded and minced
  • 1/2 small onion, minced
  • 1 garlic clove, minced
  • 1 tsp mild chilli powder
  • 1 tsp ground cumin
  • 1/2 tsp oregano
  • 14 oz (400g) can chopped tomatoes
  • 1/2 c. (120ml) vegetable oil
  • 8 regular sized, thin flour tortillas
  • 1 lb (400g) lean ground beef
  • 1 packet taco seasoning
  • 16 oz (400g) refried beans
  • 1 1/2 c. (200g) shredded cheese, cheddar and mozzarella mix
  • 4 green onions, sliced
  • 1/3 c. (40g) black olives, sliced
  • 1/3 c. (40g) tomato, chopped

Instructions

  1. For the sauce, heat oil on medium heat in a small saucepan and sauté the jalapeño, onion and garlic till soft, about 2 minutes. Add the chilli powder, cumin and oregano and sauté a further 1 minute. Stir in the canned chopped tomatoes, season with s&p and simmer for 5 minutes on low.
  2. Meanwhile, heat the vegetable oil in a skillet large enough to fit a tortilla flat. Shallow fry each tortilla separately in the hot oil for about 20 seconds each side. Transfer to paper towels to drain excess oil. 
  3. In a large frying pan, cook the ground beef on high heat till done. Drain excess fat, if any, then stir in the taco seasoning till evenly coated, turn off heat.  Cook the refried beans in a  bowl in the microwave till hot, about 2 mins on high. 
  4. Preheat the oven to 375f (190c). On parchment lined baking sheets, layer the pizzas in this order: Fried tortilla, refried beans, seasoned beef, fried tortilla, sauce, cheese, olives, green onion and tomato.(*pictured below) Bake each pizza for 5 minutes or till cheese is perfectly melted. Cut into slices and serve!
